I must admit, I love pink. And yes, gory mayhem bakery is fun and all, but sometimes pink glittery girlie mini muffins are just the thing you need. In the mini muffin version, even the size they come in is girlie. Isn’t this just fantastic!? :D
The recipe is extremely simple and the ingredients are cheap, which is always good – and they tasted nice too, AND they come in pink. Perfect.
Girlie Vanilla Muffins
170 g butter, at room temperature
~16 g vanilla sugar (2 packages)
320 g sugar
1 tsp vanilla flavouring
280 g flour
3 tsp baking powder
1 pinch salt
300 ml Milch
In a small bowl, beat the two eggs because they don’t deserve any better. In a bigger bowl, beat the butter, the vanilla sugar and the sugar until well combined. The amount of sugar might seem a bit much but it’s really not that much sugar. Say it with me: “It’s really not that much sugar.” Keep repeating the sentence until you believe it. Then add the eggs to the butter-sugar mixture, mix well. Stir in the vanilla flavouring, then sift in the flour and the baking powder, stir together with a pinch of salt. Finally, add the milk and give the mixture a final beat so you get a nice fluffy muffin batter.
Bake at 190°C for 15 – 17 minutes for mini muffins, about 20 minutes for regular-size muffins. Let cool in the tin.
For the icing, mix some of the icing sugar with a tiny amount of water and/or grape juice. Adjust the colour of the icing by adjusting the amount of grape juice. Use pretty glittery sprinkles to add a final touch of girlieness.
Right. I’ll go watch a horror film now to make up for all the pink.*
